Confessions of a Health Nut

Well, we have officially moved into our new home as of Monday.

However, if your definition of “moved in” means that all the boxes are unpacked and everything is in its place, well, then I’m a far cry from being done!

I actually love moving, and I even love unpacking things and putting them in their new place, but that was before I had kids.

Before, I would spend every moment I had available up until the wee hours of the morning getting my new home in order.

I just can’t stand being in my place when everything is out of order and cluttered!  It drives me bonkers!

But the days of working non-stop and finishing the job in three days are long gone.

Now, I have about one good solid hour while the kids nap, an hour or more (depending on how much energy I have) after the kids go to bed, and little bits of time during the day if the kids are content with their activities.

And forget finding time to cook!

Even though my kitchen is the first area of the house I’ve attacked (and for obvious reasons), trying to put together a meal (or even part of a meal) with limited and scattered supplies is, well, make believe! [Read More…]

Okay, so here’s the deal.  A couple of weeks ago I finished Eat To Live by Dr. Joel Fuhrman and was inspired to try his 6-week “program” as a challenge to myself and to you, my friends and readers, to incorporate more plant foods into my diet. I love a good challenge, especially if it’s health-related! [...]

My Smoothie and, of course, the famous Oklahoma Red Dirt in the background. Well, we have officially been in the Sooner State (Oklahoma, for those of you who are unaware) for an entire week now.  Yee-Haw! (I have permission to say this seeing as how I am an Okie by birth.) We are still waiting [...]

Oh, The Love of a Father

Anyone who says that the existence of God’s love and salvation for people is non-existent in the Old Testament either hasn’t read it in its entirety or has completely misunderstood its significance. Now, trust me when I say that I’m not trying to be harsh or judgmental here, because I know as well as anyone [...]

A few weeks ago my family packed up our van and headed out of town (out of state, actually) for two weeks.  We were going to “test the waters” in another town where we felt God was leading us to move. It was on that trip that I started reading Eat to Live and also started [...]

Are You a Saul or a David?

April 23, 2012
Thumbnail image for Are You a Saul or a David?

As many of you know, I have been reading the Bible through chronologically now for over three years and it has absolutely changed my life! I have such a deeper and richer understanding of who God is and what His Story is all about. Instead of reading it in bits and pieces I am seeing the [...]

Well, I’m sitting in my living room amongst boxes, empty bookshelves and bare walls…  again. We’re about to embark on our third move in a little over three years. I actually love moving.  It’s exciting to think what our next journey will entail, who we will meet, and what our life will be like for [...]

Recipe #2 in my Eat To Live series is Dr. Fuhrman’s Tomato Bisque soup.  It is delectable – oh my goodness! I love tomato soup, and although I already have my favorite recipe, I’m always trying new ones just to see if I can make mine any better. But here’s the crazy thing about this recipe, it [...]

How To Blend a Perfect Smoothie (without the perfect blender)

As many of you may know, I LOVE SMOOTHIES! I’ve always been a smoothie girl (ask my mom) and have probably tried everything there is to try: yogurt smoothies, protein smoothies, juice smoothies, oatmeal smoothies (yes, you heard me right), and who knows what all else. However, in the last couple of months, I have [...]

I Just Lost Another 2.5 Pounds on The Eat To Live Plan

I can’t believe it!  I got on the scale this morning expecting to see my same numbers (which I’m fine with, by the way) and I was down 2 1/2 pounds from 2 or 3 days ago! I guess I shouldn’t be too shocked because as part of my Eat To Live series, I’ve been [...]
